This one if for the California Culinary Crew. There is a week left to sell foie legally, but here Chef Russell Jackson demonstrates a technique so that it can enjoyed for up to another year.

Whether that be for a simple preparation

or a something a bit more over the top.

How does everyone prefer their foie? Legal is a given.

Illegal? Fucking stupid. I like seared lobe with a burre rouge and an open bottle of wine. Any wine will do.
