I’m always interested to know how other individuals in the food world  maintain a healthy balance between food and fitness. Especially when they are known to routinely take part in decadent tastings at the best restaurants in the world. I’m going for the steamed skate. I’ve never had it before. Saw it at a market recently, but knew I wouldn’t have time to cook it that day or the next. I really need to try it one of these days.

Also – Regarding what dish I would choose from the best dishes 2011, I picked #7 http://www.flickr.com/photos/ulteriorepicure/5887534360/in/set-72157627157075920/lightbox/, the Setas Salteados con Foie Gras.

Reason being the sole fact I have never had Foie Gras before, and it being paired with mushrooms (one of my favorite vegetables) + a Fried Egg on top sounds fricken amazing.

If I had to pick just one dish, it’d be the Arroz de Colomi i Ceps. Whether it’s paella, fried rice, or bibimbap, I’m a sucker for rice+stuff dishes.

TownHouse is at the top of my list to try, as is Bluestem, so I’d have to go with the Beef Cheek dish to try. Hay smoked milk sounds so interesting.

I would definitely go for the pig ears. There is zero chance that dish tastes bad.

Great interview! I like how you incorporated all the questions and the flow of them :)

I’m pretty impressed with the Canard au Caviar mostly because of the color of the duck, and I’m a sucker for a good caviar
